 Preheat the oven to 230 °C and place the rack in the center.

 Increase heat to maximum and pour in white wine and lemon juice. Allow the mixture to boil, then reduce the heat to medium-low and cook for another 2-3 minutes to allow some of the alcohol to evaporate. 

 

 Add the cleaned mussels to the pan in a single layer, ensuring they are submerged in the liquid. Season to taste with freshly ground black pepper. Cover the pan tightly with aluminum foil or a lid. 

 

 Place the tray in the preheated oven and steam the mussels until they open, about 10-12 minutes. Keep an eye on them and avoid overcooking as it can result in tough, rubbery clams. 

 

 When the mussels open, remove the tray from the oven. Using a slotted spoon or tongs, transfer the mussels to a plate and discard any unopened mussels. Be careful not to pour the remaining aromatic liquid into the pan.
