 Peppers, also known as sweet peppers, are not only colorful and visually appealing but also highly nutritious. They are an excellent source of vitamins A and C, potassium, and fiber. Peppers come in a variety of colors including green, red, yellow, and orange, each with their own distinctive flavor profile. As a filling container, they are ideal as a supplement to savory fillings due to their stable shape and mild taste.  Substituting ground beef for lean ground turkey in this recipe not only reduces total fat but is also a good source of protein. Turkey is a lean meat that provides essential amino acids needed for muscle growth and repair. Plus, it's lower in saturated fat than beef, making it a heart-healthy choice. In addition, turkey is rich in vitamins B6 and B12, zinc, and selenium. These nutrients support immune function, promote energy production and contribute to overall well-being.

Ingredients.

To prepare turkey stuffed peppers, you will need:


4 bell peppers (any color)

1 pound lean ground turkey

1 cup cooked quinoa

1 small onion, diced

2 cloves of garlic, minced

1 cup diced tomatoes

1 teaspoon dried oregano

1 teaspoon ground cumin

Salt and pepper to taste

Instructions. 

 Preheat the oven to 190°C. 

 Cut off the caps of the peppers and remove the seeds and membranes. Rinse them under cold water and set them aside. 

 Heat 1 tablespoon olive oil in a large skillet over medium-high heat.Add the diced onion and minced garlic and sauté until translucent and fragrant. 

 Add ground turkey to skillet and sear until brown and cooked through. Break it  into small pieces with a wooden spoon. Combine 

  diced tomatoes, dried oregano, ground cumin, salt and pepper. Let the mixture simmer for 5 minutes to allow the flavors to blend. 

 Remove the pan from the heat and stir in the cooked quinoa. Season according to your taste preferences. 

 Stuff each pepper with the turkey and quinoa mixture, packing firmly so they are evenly filled. 

 Arrange the stuffed peppers on a baking tray and cover with aluminum foil. Bake for 25 to 30 minutes or until the peppers are tender but holding their shape.  Remove foil and bake 5-10 minutes more, until top is lightly browned.

 Once cooked, remove the stuffed peppers from the oven and allow to cool for a few minutes before serving. 

 Garnish with fresh herbs such as parsley or coriander for added flavor and color
